Each class will open with an inspirational look at a contemporary or historic ceramicist to get those creative juices flowing, then we will jump right into the making of the day. First we will create some of our very own texture tools, then there will be plenty of hand building available as well as opportunities to build your skill at the wheel. Join Fran Pici Halligan for a fun, hands-on BOCES class where you'll learn the techniques behind creating beautiful edible focaccia masterpieces using fresh herbs, colorful vegetables, and your imagination. Whether you're a seasoned baker or a complete beginner, you'll leave with new bread-making skills, a stunning focaccia to take home, and plenty of inspiration to keep creating in your own kitchen. Come ready to knead, create, and have fun! Focaccia is wonderfully hands-on, and that’s part of the fun! You’ll have the chance to mix, stretch, dimple, and shape the dough by hand in a relaxed, welcoming environment. We’ll wash our hands thoroughly and keep all work areas clean and sanitized throughout the class. WaitlistGame ProcessingAdult EnrichmentGame Processing: Field to TableBefore you can break down an animal, you have to know what you're looking at. This hands-on class with Luke Schultz starts with the fundamentals: in-field gear essentials and techniques, general skinning, quartering, and boning, understanding how connective tissue creates natural dividing lines, and how to get the best table yield from success in the the field. You'll practice cutting and boning technique on your own game quarters (optional) — so bring what you've got in the freezer or from this fall's hunt. If you don't have your own game, you will still get to practice the cuts. By the end, you'll see an animal as a roadmap instead of a red mass of muscle. Advanced Game Processing: Know Your CutsFor hunters ready to move past the basics. This class digs into technique and method — workspace setup, tool selection, and the hands-on judgment calls that separate a clean breakdown from a wasted one. Luke Schultz walks you through processing your own game quarters with an eye toward efficiency and getting the most usable meat off every cut. The class will include identification of prime cuts, roasts, and trim meat, as well as general approaches to grinding, sausage making, and other curing techniques. The course will include hands-on meat processing. We recommend bringing your own game quarters, but it's not necessary.Adult Fall 2026 -
Gingerbread House WorkshopAdult EnrichmentGet in the holiday spirit with this two-day gingerbread house workshop! Day one, you'll learn how to make, bake, and mix your own gingerbread dough — then head home with the dough recipe, which you will make and bake at home before we meet again. Day two is all decorating: we'll supply the frosting, candy, and piping bags, and you bring the creativity. A great parent-child activity, and a sweet new holiday tradition.Adult Fall 2026 -

It's (Spanish) Tapas TimeAdult EnrichmentPretend you're in Barcelona and load the table with snacky bites and a pitcher of sangria.The flavors are bold, the cooking is simple, and you'll find it's one of the most convivial ways to host. The class will be focused on hosting a Spanish tapas party. We will also learn about the history of tapas and the components of a Spanish pantry. We will be making traditional tapas such as Catalan's tomato bread, sizzling garlic shrimp, bacon wrapped dates, blistered shishito peppers (if I can find them) as well as Spanish meats and cheeses, Spanish boquerons/anchovies, assorted olives and peppers, Spanish salad (likely) and N/A Sangria. We will delve into Kratom — a legal and unregulated substance that has become common throughout the country. We will build on last years discussion of the biology of addiction to understand how Kratom fits into this picture and explore how medications play a critical role in recovery. Starting SoonThe Night SkyAdult EnrichmentJoin us for a tour of the stars beginning with Astronomy 101 with Pat Bernathy at Sublette BOCES, Room 120.After class, we will drive up to White Pine Resort's parking lot for a first hand look through various telescopes with the guidance of Jackson Hole Astronomy Club. We anticipate being able to view the moon and Saturn that night.
